i’m known as the matzo queen actually. i always have been. i have matzo in the house 365 days a year. i make matzo pizzas, matzo and turkey sandwiches, i’ve made matzo and parmesian and olives before…you name it – i just love matzo! crazy i know, but it just works for me. one year i had about 20 some people over for a passover seder and started experimenting with matzo of course. i started melting chocolate and a whole bunch of yummy ingredients and pretty soon i had this chocolate brick that didn’t look so pretty but was unbelievable. that night everyone kept ouuing and ahhing and even ohhing about this chocolate matzo. it was a smash for both my jewish and non-jewish friends. i looked at everyone and I was so suprised and thought, "really?” so i started practicing, changing up my techniques, ingredients and was really enjoying myself. i noticed that i loved making these little chocolate delicacies. they turned out to be a more like decadent cracker size matzos dipped in candi's secret candied spice marinade topped with melted chocolate and nuts. i thought to myself what better way to make people smile then to create these wonderfully delicious chocolate matzos. and the more i made, the more people loved. hmmm..i said to my husband, well i probably won’t make any money off of this, but i love to do it and I love to see people enjoy... so candi's matzo was born.
